       I made up these lovely little Butternut Cardamom Muffins this morning.  They were inspired by the season.  I used roasted butternut squash from our garden and I decided to throw a dash of cardamom in.  That was after getting my package from Harney & Sons Tea.  I bought a few new teas this time and one has a hint of cardamom in it.  So this morning I decided to have cardamom in my muffins to go along with the tea.  It was delicious.  Muffins are one of the best baked-goods to recreate healthily (fresh ground whole wheat flour, raw honey, pure maple syrup…the options for muffins are endless).  They always turn out wonderful for me. 

     I am enjoying my day off today.  I do love other peoples children but… a day off is just so lovely.  Kind of funny though, my day off consists of having my nephew, Jason, here with me today.  He isn’t like work at all… He’s just a darling. I just rocked him to sleep and put him down for a nap.  He and his poor mama haven’t been sleeping so well the past few nights.  He’s getting his first two teeth!  He’s becoming less and less ‘baby’ and turning more and more into ‘little boy’.  It is truly amazing how fast he has grown.  I snapped this picture after I layed him down (sorry it’s dark).  I couldn’t resist.

       Other than muffins and Jason I’ve been doing laundry.  I used to crave Tide laundry detergent all the time but I’ve gotten used to our homemade laundry soap.  It really smells pretty good.  The past few times I’ve done my laundry though…. I’ve desired Tide.  I don’t know why.  I’ve been wanting to make cupcakes so bad too!  I just have to wait… I will make them. 

       Anyhow.  That’s my today so far. ♥

Summer Grilling

     Yesterday was quite a day. I did two of my favourite things that really are not alike at all. I got to work under my car up on a hydraulic lift (it makes it so much easier!). Yes, it was very fun. Dad and I changed my cars’ brake hoses, bled the brakes, changed some bushings that were bad and now The Z is on the road. When we got home I decided to try making grilled pizza for dinner so I mixed up a new pizza crust recipe. I was so excited while making them. They turned out oh so delicious too. When it is so warm and sunny out I think that grilling comes to mind when it is time to start dinner. But then you think of what to grill… burgers? They are so common. Try something new out on the grill the next sunny day you have. The possibilities are endless. So here is my summer grilling recipe for you.

          The Crust (my way)

  • 1 cup warm water
  • 1 Tbsp. honey
  • 2 1/2 tsp. yeast
  • 3 1/2 cups whole wheat flour
  • 1 Tbsp salt
  • 2 Tbsp olive oil

     In small bowl combine the water, honey, and yeast.  In large bowl combine flour and salt.  Add oil to yeast mixture the pour yeast mixture into flour.  Knead ten minutes.  Let rise until doubled in size.  Divide in half and roll each out into a thin crust.  They can be whatever shape you like.  Grill on a medium-hot grill for three to five minutes. Flip the crust over and turn your grill down a bit. Now is the fun part.  You can top your pizza with anything you like.  I put black olives, marinated artichoke hearts, fresh basil, fresh tomatoes, and our homemade fresh mozzarella cheese on the tops.  So, after I flipped my crust I spread some homemade pesto over the top of one and I brushed the marinade from the artichokes I used on the other one.  Then you throw your topping selection over the top and close the grill to allow the cheese to melt.  Pull your finished masterpiece off and serve.   Hope you enjoy.

     I grated a bit of fresh Parmesan over the top and dashed a bit of salt and fresh ground pepper over it right before serving.  It was so yummo served with fresh from the garden salad greens topped with a creamy balsamic dressing.
